Sweet Spiced Carrot Cake

Ingredients

• 2 cups flour
• 2 cups granulated sugar
• 1/2 teaspoon salt
• 1 teaspoon baking soda
• 2 teaspoons cinnamon
• 1/2 teaspoon nutmeg
• 2 eggs
• 1.5 cups olive oil
• 2 cups finely grated carrots
• 2 teaspoons vanilla
• 1/2 cup chopped nuts

Instructions:

1. Heat the oven to 350 degrees F.
2. Grease and flour a 9" x 13" x 2" baking pan.
3. In a mixing bowl, combine the flour, sugar, salt, baking soda, cinnamon, and nutmeg; stir to blend thoroughly.
4. Add the eggs, vegetable oil, shredded carrots, and 2 teaspoons of vanilla; beat until well blended.
5. Stir in the 1/2 cup of chopped nuts.
6. Pour the batter into the prepared baking pan.
7. Bake in the preheated oven for 45 to 55 minutes, or until a wooden pick or cake tester inserted in center comes out clean.
8. Place the pan on a rack to cool completely.
